My friend Kevin and I have often talked about starting a grilled cheese restaurant. There are hundreds if not thousands of different ways you could make a grilled cheese. Customers could select a specific type of bread and various different cheese combos. I think a restaurant like this would be particularly well-suited for airports. After all, I’m sure many people would love to grab a nice grilled cheese with a cup of tomato soup before catching a flight.
Another idea is a restaurant I would call The Kids’ Menu. It would feature all the usual things you’d find on a kids’ menu except in adult-sized portions. There’d be the usual favorites such as chicken tenders, macaroni and cheese, peanut butter and jelly sandwiches, hot dogs and more. Sides could include goldfish crackers, windmill cookies, and applesauce. Unfortunately, I sort of doubt a restaurant like this would be successful unless we managed to find a place with a huge population of picky eaters such as myself. Heh.
And another more off the wall idea that I came up with just recently is a restaurant featuring bagel entrees. There could be bagel sandwiches, bagel pizza and so on. I thought of this one night right after I made a delicious cheesy pepperoni bagel. It was really really good.

Speakin’ of grilled cheese, I just made a double decker yesterday with cheddar, pepper jack, and provolone. It was gooooooood
